Yeast Free Bread Recipe

Ingredients

- 3 cups wheat flour (preferably stone ground whole wheat)
- 1 teaspoon salt
- 4 teaspoons baking powder
- 1/4 cup liquid fat (e.g. olive oil, vegetable oil)
- 1 1/2 water or rice milk (or any liquid you prefer)

Directions

  1. Mix the dry ingredients together
  2. Don’t sift the flour.
  3. Mix the liquid ingredients together, then add to the dry ingredients.
  4. Stir thoroughly, until there’s no more dry flour left.
  5. If more liquid is needed, then add a bit more (this can vary depending on the humidity of the air in your house).
  6. Try to get the dough so it’s moist but not sticky.
  7. Keep in mind, it can take a few minutes for the liquid to be totally absorbed into the flour, so don’t be too hasty to add extra flour.
  8. It’s important not to overwork the dough.
  9. With oiled hands, shape into an oval or ball.
  10. Lightly mark an X or diamond shape on the top. This prevents the crust splitting.
  11. Put on a clean bakin sheet.
  12. Bake at 400F/200C for 40 minutes.

Variations

  • For a foccacia flavor, rub the dough with extra virgin olive oil and sprinkle on some oregano and sea salt.
  • For an added bit of crunch, sprinkle seeds on top or in the dough.
    For using as a sweet tea-time bread, use some fresh fruit juice in place of the rice milk or other liquid.
  • For a more savoury version, use tomato juice as the liquid, and add chopped sundried tomatoes to the dough.
